Vegan Carrot Cake Cookie

We still have boxes and boxes from our Tantre Farm Solstice Share. This vegan carrot cake cookie recipe seemed like a good way to use some carrots. The cookies were delicious, flavorful, and rustic. And our extra long carrot shreds were hilarious.




Meat and Potatoes Lunch

Can I just say how much I love Tantre Farm blue fingerling potatoes? We received these as part of our winter share from the farm, and when cooked, they look like little gems. So the question today was: can a person create an entire meal around Alton Brown's Baked Potato Recipe? And the answer was yes. We added Brinery black bean tempeh rubbed with Penzey's turkish seasoning and pan fried, North Star Land and Cattle hamburgers for the non-plant-based crowd, Brinery sauerkraut, and assorted pickles.

Why?

In 2011, power walking and running up stairs didn't cut it for fitness entertainment anymore, and I started running what turned out to be more than a lot. 31 plus miles on the road or trail provide time alone and and to talk with other runners. And something many long distance runners have in common is following a plant-based way of eating.

It took years of pondering this before I was willing to try. Giving up dairy seemed impossible. But several months ago I decided to try plant-based eating. A day turned into a week and a week turned into a month. Following a plant-based diet is so much easier than I thought it would be. The food is wonderful and it's possible for the effort to be low.

Friends and family started asking me for ideas and recipes so I created this site as an outlet and reference and a place to jot down my favorite plant-based notes.
